Red UK|February 2019WINTER WarmersBeetroot soupReplace the beef stock with vegetable bouillon to make this soup vegetarian.Serves 6Preparation time: 30 minutesCooking time: 1 hour 30 minutes• 2tbsp rapeseed oil• 1 medium onion, chopped• 1 leek, sliced• 1 carrot, chopped• 1 celery stick, chopped• 450g raw beetroot, peeled and diced• 1 large potato, roughly chopped• 1tbsp tomato purée• 1.4 litres hot beef stock• 2tbsp red wine vinegar• 150ml soured cream1 Heat the oil in a large, deep pan and gently fry the onion, leek, carrot and celery with a large pinch of salt for about 20min until softened.2 Stir in the beetroot, potato and tomato purée.
